ImO: Rosemary and Thyme taste like soap. Onions and garlic; while necessary for good cooking; can be easily overused making food taste like ass. ImO: Steak is a straight S/P/Butter game. I wish he'd provided approximate times for doneness instead of the gay probe tech. The avocado oil is "weird" to me:

Also: I don't think soap should touch cast iron. I agree with the hot water. I'D wipe, reheat, get A LOT more steam in/from the sink, wipe dry and recoat with tallow or bacon grease.
