So I shot a couple Specklebellies this morning. I keep hearing how they're the best tasting waterfowl there is. I've never cooked one before. Anybody got a good recipe? And I plucked them, so looking to roast them I guess.
Keep it simple. Turn oven to 400. Dab of butter with garlic and green onions in a cast iron skillet on medium high heat. Put the speck breast skin side down, salt and pepper, leave until turning crispy. Flip, salt and pepper, put the skillet in the oven for 7-8 minutes or done to medium. Serve with the usual steak sides.
Put oranges cut in quarters into the cavity, along with s & p, butter, and a few onion slices.
Smear the outside with a little butter, ground pepper, and some garlic salt.
Let set at room temp for 1 1/2 -2 hours . Roast at 375 for 1 1/2 hours or til done.
