Fowler Ks sportsmans/mens club used to have an annual "coon feed" as a fund raiser, the coon was excellent. They boiled it to get the fat off it then shredded it like pulled pork with bbq sauce. They served deer, rabbit etc as well.

Wild coons, wild pigs and bears all have similar diets.
