I sneered and jeered in the 00's and remained a "damned hip splitter": You TOO can be like "Richard" and "Greg" (whom could do this with fillet knives): This is an efficient/clean process which doesn't waste/dry meat and better deals with the bladder: IMHO; you'll also get more "respect" at the processor. Greg could dress a squirrel to where you thought you could eat it raw:

SHARP knife and "core" the pelvis. The saw's path should be free from hide/hair. I also believe I'll pass on the "seasoning leaves roll-over" in favor of letting gravity evac the leftovers out through the cored pelvis.

Hmmm--I prefer to let gravity take it out the mouth/nose.

I use the gutless...5 minutes max and its ready for the cooler. I do carry a small saw for easy access to the heart though.

I had a wise grey-beard from NDA teach me the "no-pelvis-split" method and then advised to hang the deer by the pelvis to avoid putting stress on the hams. I'm no expert, but man did this work well. And the buck weighed 200+ field dressed.

I hope we see him back again on Wednesday if he stays true to his word!

Kirk and his dad have done a lot of skull mounts for me. Best beetles ever. Good folks!

I got shown the way as well but part I can't really remember and the other part is I go into auto pilot mode. I got my start to finish method and have yet to say, man I wish this tasted better or was more tender than what it is. Also have had more than enough people compliment me on how good X venison meat I gave them or made myself was, have even made items that got a few people that swore venison was terrible until they ate everything I made and I revealed it was deer meat.
To each their own.
I will say that we should have went gutless method on one of the does shot during Twist of Fate that got its guts destroyed on a quartering to angle, she didn't go far but it was a mess that I was glad my buddy got to clean out

About twenty years ago I was gutting a deer by myself and was struggling with the split method.

As I was swearing out loud it suddenly dawned on me that needing to split it made no sense at all - and I decided to filet around the inside perimeter and boom - the "plug" came out with the gut pile.

I was pretty pissed that the split method hadn't been relegated to history and somebody passed that POS method down to me. 🥴

I've since tried some spiffy new saws just to avoid accidentally poking something doing the plug method - but they seem just as risky as the plug - so that's where I've settled.

100% Ruttin, if I can't get a vehicle of some sort right to the critter.

My elk this year took just a little longer than five minutes...I did have him caped out and quartered up and excess meat off in less than an hour doing it solo. That was the easy part...the packout sucked but well worth the prize!
