    Venison Backstrap along the spine on the outside of the ribs would most approximate NY Strip beef steak. "Backstrap" is what was used to make the video. Tenderloin/Filet comes from inside the ribcage and will be one of the most tender cuts from any animal.

    With a good dog you should only have to "shoot" birds until there's some snow, then just let the dog catch them out of cattails or other really thick cover.
