Baked walleye/perch recipes?

Any of you guys ever try smoking walleye or perch?
dont mean to hijack the thread

I've done a light smoke one walleye then laid it in a potato onion butter packet but never brine and smoke.

I can tell you KDM's smoked paddle fish definitely is not yucky.

13x 9 glass cake pan. Peel &1/4 slice thin potatoes cover bottom with taters. Zip your fillets and cover taters season fillets Lawyers, Lemon Pepper, pepper. Add little pcs red and orange peppers. Another layer of sliced thin taters. Add 1/2 lb Mozzserilla cheese over taters and 1/2 lb cheddar cheese cover with tin foil bake at 350 for 45 minutes, remove foil and bake til cheese is litely brown. Poke with fork to make sure taters are cooked..cut into squares and enjoy..usually serve a salad first.

Google "parmesan crusted bluegill", it is a simple and amazing recipe! Here's a few trial and error tips: great for perch fillets, you can use on walleye if you cut the fillets down to perch size, use panko bread crumbs for good crunch, make sure fillets are room temp. so the butter doesn't harden on cold fillet. This recipe is a keeper!

Smoked northern not bad if don't right... think there may be a law against smoking walleye tho. Lol
