I'd suggest it's a combination of species (body style) and weight. Can't imagine a common 14 inch walleye being held by the gill plate is going to suffer internal damages, but an eight or ten pound walleye being held by the gills has really got to put the stretch to the internal organs. Same with a pike of good size, but a 20 lb buffalo or 15 lb carp doesn't seem to have quite the stretch going on.

Just reading this one reminded me of when I went completely vertical on an incline table. Hey, if you wonder how the fish feels, how would you feel? I have an incline table for curing my back pain (have never been back to a chiropractor since i bought it 10 years ago). The manual warns one of going vertical the first time. She'll give ya a hernia. Son of a beach did that almost hurt; upside down hanging by the feet. I've heard of others hurting themselves by doing it. Big fish I assume are the same way held vertical.

whats best is firing them in a cooler of ice and a bath in some hot oil or baking in a cast iron

It is harmful for all fish, but not fatal for all fish.
