I like both smallmouths and largemouths. Hell, I even like eating rock bass but I enjoy fish that taste "fishy".

Cooler water as stated helps,better yet regardless if you bleed them out its best to fillet(make a "v" cut) the laterial blood line out of each fillet,this is where the muddy tastes comes from...
