Injected and fridged the beef ribs overnight, seasoned and hung in the grill for 4 hours.

After cooking in foil an hour and a half they rested in foil for about 45 minutes before slicing.

We do like it. Does fast pork St. Louis ribs, not the prettiest ribs but very tasty! Brisket, pork butt, beef ribs, chicken... the PBC is a really good tool to have in the cooking arsenal, there is just something about the hanging method we are liking. Wife and I have been getting more into doing small town cook offs during the spring, summer and fall, next season she says it going to be her cooker for chicken turn ins.
