Fished in NW territories a few times. Straight out of the water into the frying pan are as good as any fish. Meat is firm, tasty, & even curls up a little in the pan when frying. This is probably due to the 38 degree water we are fishing. Lake trout I've had from Ft. Peck need to be smoked.Of all the strange fish I keep and eat, I'd say trout is at the bottom of my keep, clean, & cook list. One of the worst fish I've had was a lake trout I kept and ate out of the tailrace. Smoking it does make it a bit better.

My younger days exploring mn BWCA for days canoeing to remote back country lakes,humping many portages,hitting lakes few people set eyes on,occasionally we would hit deep gin clear lake,no electronics but casting a small cleo spoons out as far as you could letting the spoon flutter down until it rested straight down below the canoe we knew "lakers" nothing huge 2,3, lb'ers no scales on these Lakers filet leaving skin on dam good eats with crispy skin on like sunfish and crappie.My kid and FIL brought home some lakers from Ft Peck last week. Going to smoke most of it but tried a couple filets on the grill. Was surprised at how good it was. I did olive oil both sides, salt, pepper and old bay, butter over the top. Wrapped in tin foil on the grill for 15 minutes, then glazed with demon pig honey mustard and oven broil for 4-5 minutes until golden brown. Was way better than I thought it would be.
I agree with you. Sometimes. One of our lakes here. Any laker I get goes right back. But other lakes the lakers are delicious. I think it has to do with the food source. it’s the best way to eat it. I also really enjoy making a salmon Wellington type dish with it. Wrap it in pastry with spinach and cheeseused to go up to souix narrows in jan for lake trout, they were always guys having fish boils. i took mine home and smoked it. was good smoked.
