An alien hoofed sum b got me one of those a few summers back. First and (so far) last fish I've smoked. No brine, just alotta smoke. Was damn good. Can only imagine if I applied the kdm methodology of fish smokin'. I will try it a gain this summer. Mark my words msa....mark. my. words...

I think they're mushy. Do you do anything special? I've heard keeping them on ice right up til the moment you bread/batter them for frying but I guess I've never tried it.I would put crappies up there with best eating fish. In reality i have had alot of different fish and when deep fried unless it is a big piece of shit with shitty breading it all tastes the same with hot sauce on it.
