all easily achievable as long as I stay single
Do you have a lot of your own gear you travel with? The reel size and line weight would be crazy i assume for the big sharks and bluefin since you wouldn't be able to chase them being on shore.

pretty much all my own gear. Youd be amazed how big of a fish you can haul in on todays big spinning reels. I've caught 250-300+ pound sharks and rays on my Kastking Kapstan Elite 9000 spinning reel with 50lb test, and the reel has a peak 55lb drag, but you cant hold onto it when its almost maxed out, and I do have much bigger and heavier gear I leave down in Florida.

Knot of choice?! Double Palomar?
All different by application, FG knot on saltwater line to line top shots for sharks since the FG has the lowest profile for casting thru guides, regular Palomar to lures and some hooks, Albright from braid to mono/fluro leaders, Snell or uni to circle hooks to pull in line with the shank....

I'd love to do a thresher and mako on a lure. I'd keep ONE mako for the jaws/steaks; a few for me a few to be sold to a market/restaurant. I'd probably give it away for the jaws cut out and a couple steaks.
