Ingredients (makes a small jar, about 4–6 servings as a side or snack)
  • 200–300 g Japanese beetles (after cleaning; start with more live ones)
  • 3 Tbsp soy sauce
  • 2 Tbsp mirin
  • 2 Tbsp sake
  • 1½–2 Tbsp sugar (adjust to taste)
  • 1 tsp toasted sesame oil (optional, for gloss and aroma)
  • Pinch of salt
  • Optional: 1 thin slice fresh ginger or a pinch of toasted sesame seeds
Preparation
  1. Harvest and purge: Collect beetles in the morning when they are sluggish (knock them from plants into a container). Place them in a ventilated container without food for several hours or overnight so they empty their guts. Freeze 24–48 hours.
  2. Clean: Thaw, rinse well in a colander under running water. Blanch in boiling water for 3–5 minutes. Drain. Optionally pinch or snip off the hard wing covers (elytra) and hind legs for easier eating—the body and remaining parts cook fine.
  3. Dry-roast: Heat a dry skillet or frying pan over medium-low. Add the drained beetles and stir 3–5 minutes until surface moisture evaporates and they begin to smell nutty. This step improves texture.
  4. Simmer (tsukudani method): In a small saucepan combine soy sauce, mirin, sake, and sugar. Bring to a boil, add the beetles, and simmer over medium heat, stirring often, until the liquid reduces and coats the insects in a glossy glaze (8–15 minutes). Add sesame oil and ginger near the end if using. Taste and adjust sweetness or salt. The mixture should be thick and shiny, not soupy.
  5. Finish: Cool. Sprinkle with sesame seeds if desired. Store in a clean jar in the refrigerator for up to 1–2 weeks (the high-salt/sugar preserve helps keep it).
The finished dish looks similar to traditional inago no tsukudani—dark, glazed, and clustered.

took a sip of coffee and felt something that wasn't liquid and spit it out right away, boxelder bug boy to they a nasty taste to them. Must be some sort of defense thing .

Only two things I've come across that will eat box elder bugs. Tame Ducks and Hogs. Watched both chow down on fall box elder bug piles with relish delight. 'Bout tossed my cookies watching the process.

Bluegills really like them. When we were kids me and my brother didnt have money for crawlers so we caught a bunch of boxelder bugs and put them on little hooks and came home with a limit of big gills my dad didnt believe us so we had to go show him.

Last year I had a beetle bug hide in a piece of popped corn. I know exactly why nothing eats them. Took a week and a whole bottle of Scope to get some of that taste out of my mouth. Icky-----------------------------------------------Icky. LB
