I love pickled herring. I don’t recall an ammonia smell in pickled herring. Maybe I didn’t let it get ripe in the windowsill long enough?

I only recall the ammonia in tiger meat one time, but yeah it was memorable. I do have a sensitive olfactory though. When lamb is being cooked I can smell the barn yard it lived in.

It just dawned on me that kimchi is something that can have a note of ammonia on occasion.

I’ve had great tiger meat from butcher block and I’ve had some that was a little too ammonia-y. Never tried West Dakota or 3Be’s but both have their fans so I’d say try em out. Beer and saltines are a necessity.

East 40 has good seafood and as far as I know the only place you can get raw oysters in town (besides the seafood truck). Oahu is our favorite for sushi, Kobe’s in 2nd place.

I have eaten it in so many states, bar's, meat market etc.. never heard about Ammonia smell sure not eating lutefisk. Never an issue ever for me and I do eat sardines, Sushi of all types, pickled northern heck it is all good.

There can be an “iron” taste in red meat - that’s in the neighborhood of ammonia on the WTF scale. Maybe that’s what it was.

Generally true... except when foraging for shrooms.

But I do tend to smell practically everything first (dairy, meat, etc. when it's taken out of the fridge), which has undoubtably saved me from Montezuma's revenge a few times.

BTW - does Fargo have a good source? I need to try it as it's been 40 years easily for me - I can't recall the taste/texture.
