P.S. I absolutely LOVE a good ceviche. Looking forward to a giant bowl with some home made tortilla chips in a couple weeks.

Escargot in a garlic butter is also fantastic, BTW.

P.S. P.S. If you guys find a bunch of jumbo snails floating about, please let me know.

I enjoy wierd foods often, including roe sacks but you won't catch me sucking the eggs right out of the fish like I have seen on some tv shows. Haha

This was cleaned pike roe last spring. I washed, removed the membrane, brined in salt water, and enjoyed it on everything for about a week. It tasted better than any jarred/processed caviar I've had.roe.jpg

Carefully remove the egg sacks from the perch being extremely careful not to damage the membranes. Rinse under cold tap water and place in a bowl large enough to cover all of the sacks. Pour a cheap beer over the sacks enough to cover and let soak. After you have finished a few cold ones (case or 2) and polished off your meal of fresh fish hit the sack satisfied. Wake up in the morning and dump the unidentifiable shit you left in the bowl the night before and wonder WTF you were thinking!

If you ever get on the east coast give Conch a try. Had it one night with a big group. Appetizers were being passed around the table, so I tried one not knowing. Really damn good. It was rolled in a ball and breaded. Really suprised myself.

Conch ceviche was the best ceviche I've had.

We dove for our own conch in Grand Cayman and made our own ceviche and it's superb as Ahab said. Getting the buggers out of the shell demands a proper notch be made in their shell (pick hammer) but it's easy after that. Lots of youtubes out there to help a guy figure out how to get them out - and lots of videos for cleaning up the foot meat properly and making ceviche. Makes for something fun to do anyway - while you're drinking rum and such.

says the guy who likes cheesy tots at Burger King.

Burger King has cheesy tots? I haven't ate there since my buddy ordered 3 rodeo burgers with "no spit please" back in college.

if "Foot meat" doesnt make a guy hungry check your pulse!

At least it's not feet meat because they's only got one.

I tried it once will never eat it again.

I would try it again as long as someone else that knows what they are doing makes it.
What we made was not very good eats, didn't suck that bad though if you slam a Keystone behind it
