How much beef tallow should I mix with moose to make burger? Anyone have a process they usually follow to make burger?

I didn't mix any with my moose and it was great. If i was going to mix it for making a patty or meat balls I would just mix it with 80% hamburger prior to cooking. I don't like to mix fat into anything not processed prior to freezing.

I never mixed anything in either. I used it no different than beef, even when making patties. Thought it was terrific

I added 3# ends and pieces bacon to every 10# of venison.

You people that got a moose, did you cook the nose like they do up in Alaska? and if so how did it taste

We used 10% beef tallow last time and it turned out great. You really can't go wrong without the fat either though.

if your worried about it being dry add the fat/olive oil when cooking it. No tallow needed

I use olive oil when cooking any wild game, helps keep the dryness away. Just don't over cook cause well done is shoe leather.

I didn't add anything to moose.... don't over cook it either, it takes about half the time as a regular beef burger on the grill.... moose patties about 1/2 inch thick for reference

I've never been fortunate enough to harvest a moose, but I've added 10% to elk before and it was good. My wife couldn't tell the difference from elk and beef hamburger.

Another option for frying lean meat is throw a slice of bacon or two in the pan first for some lube.

my wife kind of freaked on my ass yesterday when she found out I was dicing 3 or 4 strips of bacon into a pound of venison, apparantly that know it all thinks the bacon needs to be cooked first. Women, if they weren't good for fucking, we would shoot them like gophers.

I like cooking with cast iron but I'm getting spoiled with those copper frying pans , Dang they make clean up easy.

Haha , You have to kick them out of the kitchen when you are playing chef, Anything they don't know won't hurt them .

I added 10 percent of 80/20 beef to mine. Just helps it overall in my opinion.

I add 1 lb beef kidney fat per 10 lbs of venison/elk or whatever to make my burger. Ends up in the low 90's for percent lean burger and the beef fat adds some nice flavor.
