I think as long as you filet a fish that has been taken care of, it’s hard to have a bad filet. Let them float around dead in your livewell in July and you get mushy fish.

I think they are mushy alive in late summer too. I put the plug in the live well, dump in a 20# bag of ice before I leave the dock, cut them after I catch them and let them bleed out on ice. They firm up when they float around in ice water all day.

Now that I have a live well, I use ice and bleed them out. She couldn't tell then. Now I'm hungry for fresh walleye.

We fished Last Mountain Lake a few years back in Saskatchewan. It was mid August, those fish were the fishiest walleye I've ever tasted in my life. After talking to the locals, they said no one every keeps fish after July because of that reason. All of the bays had 6in of green foam on top of the water.
