I use frozen shredded hash browns and cast iron. It took a while but I finally figured out to use a bunch of grease like he said. I might try covering them and thawing them out 1st like he suggested. When I first started cooking breakfast I always shredded my own, but its much easier to buy them.
Make sure you thaw them out, and get all the water out of them. If not they will be golden on the out side and more mushy on the inside.

I frequently use the dehydrated hashbrowns from Costco that come in the mini milk cartons. Add hot water while you're cooking other stuff, they're ready for the pan when you want them!

Yup, those work great. Hungary Jack in some of the other grocery stories are about the same.
