I'm sitting here slightly depressed.

It'll be the first time in 40 years I I won't have the privilege of having fresh bear meat. :(
Never had bear meat..heard its greasy...what are your thoughts?

How old is the fire?
Been doing the bear thing every year since 1985.
This is the first year since then I haven't dragged out a bear.

Not saying I'm done with it but the desire has certainly shrunk!.

I once had 12 people in camp and we killed 7 one night.
Dragging out/ skinning/ cutting up the meat sucked ass.
That's way back when I was young/ strong.
Last year (year ago today), I shot my 61st bear. I was alone and I bout blew my nutts out trying to get it loaded myself.
Not a big bear (bout 225#s) but it kicked my ass!!

As for bear meat, it's freeking FANTASTIC, the fable of it being tough and greasy has been passed down through generations same as a .410 Guage slug shoots like a high powered rifle.

Have given away many #s of bear meat, have cooked many #s of it and brought it to local social event and have NEVER brought home any of it.
I've seen the prissyest of the prissystd women that live on TBone Steaks remark on how good it is and getting feedback/ questions/ intrigue from them on how to go and kill a bear means more to me then any I've killed.
I may be slowing down but... I in a small way feel quite proud that I've helped many folks realize how good bear meat is.
Gotta say though, you absolutely MUST get it retrieved, skinned and call
cooled down a.s.a.p.


In short... bear meat is GOOD stuff!.

I agree! Bear meat is delicious in it's own unique way. Do cook it just past medium rare (at least 155*F).
Bear meat & wild hog may still carry trichonosis....rare, but possible.
The old wive's tale of domestic pork must be cooked to well done for the same reason is false....domestic pork no-longer carries trich. Cook it to 145*F for juicy, delicious enjoyment!

So how do you cook/prepare it? Is it prepared like you would deer, like making sausage or all of it like steak where you would just grill it or roast it?

Fester: Do both....steaks, chops, loin, and roasts to 150*F or more to your liking, trimmings (minimum fat) and misc chunks for burger or sausage, and render the fat on slow heat for long time!. Bear gease (fat rendered) is great for cooking fat, basting meats that need more moisture (wild game), in frypans in place of oil/butter, etc. GREAT FLAVOR.

I've been working a second job so have been 100% absent as fuck lol
But here's a food pic. Smoked turkey and a full Thanksgiving dinner since we'll be gone over the holiday this year. The family and I agreed, smoking the turkey was 100% better than the oven and worth the extra work. Hope y'all have been good.
