Shit the last brisket I smoked was 100 bucks!!!

It's so hard to beat prime rib, in fact I'm not sure it's possible.

I've gone from beef to smoked pork as my go to big gathering meals. Seems to be a hit with other folks as well. However, if I had to choose between the given options it would be prime rib in my smoker until med rare. Sides of skin on mashed potatoes, garden green beans, home made horse radish for the prime rib, garden salad, and home made pumpkin pie from scratch to top it off. Yep!! That's what I'd do. Well, me and the Mrs. would work together on it to be totally honest. (Grin)

Here's how I do my prime rib, cut 1 1/4 inch thick steaks, season with Famous Dave's rib rub then refrigerate for at least 12 hours.

Get the Black Stone griddle hot and melt a 1/2 stick of butter. Cook 3 minuets on one side then flip over, put the other 1/2 stick of butter in between the steaks. Cook to your desired doneness.

Rib Roast USDA Choice. We only eat beef a few times a year in our house so I guess I just grew too accustomed to lean meat. Choice is borderline too fatty for me, prime is way over the top. Into a very hot oven to crisp it up and then finish it slow. I smoke almost everything, but do not prefer it for my rib roast.

We used to always have pigs feet Christmas Eve, but it's been several years since I've been at my parent's for Christmas. I do miss that fine delicacy.

home made horse radish for the prime rib

Hard pass on the Norwegian Crank for me.

Mom always made Swedish Meatballs for Christmas dinner.

Had meatballs, turkey nuggets, and shrimp @ the in-laws last weekend.

I suspect it'll be Prime Rib on the BGE for us on Friday. I'll season tonight with carmelized garlic olive oil, some smoked sea-salt, and just a bit of rosemary/thyme. Then on Friday I'll reverse sear it to a finished temp of 125ish.

Pigs feet are the best. My dad would boil them and put in a pan then into the fridge. A little vinegar and salt the next day and they were delicious. It’s been about 5 years since I’ve had them but it was a treat.

I had to stop and look at Christmas meat porn while shopping Cosco tonight. They have all of the above in prime cut and king crab legs to boot......Good prices and great looking meat!

We had pigs feet growing up, but they were smoked (ham hocks) and we had them with sauerkraut and dumplings. My wife's family is very Norwegian, and when we had pigs feet at her family's house, it definitely was not what I expected. I was not impressed.

Do you recall what the $/lb was on the Prime grade tenderloin and rib loin?

Prime grade Prime rib is either $16.99 or $17.99 I don't recall which. King Crab is $37/# in 10# boxes, it think it's higher if you buy less.

Being old and broke, meat balls made half and half with pork and `beef. Mushrooms and sweet onion brown gravy, mashed taters, carrots and sweetcorn. Guess where all the veggies come from. Applecrisp and icecream for afternoon lunch. I don't have to spend much to eat good. LB
