What is your favorite cajun spice?

I like cajun everything, Have 3 or 4 different shakers of cajun spice that I thought was up to par till we had some store bought pre-seasoned cajun ribs. I think I need to upgrade my spices. What is your favorite ?

I found this online about a year ago and have been using it. I add more cayenne and a about a Ts of coarse smoked salt

1/4 cup Coarse Salt
1/4 cup Paprika
1 T Dried Thyme
1 T Dried Oregano
1 T Coarse Pepper
1 T Onion Powder
1 T Garlic Flakes (or Granulated)
2 t Cayenne Pepper

As for store-bought brands I really like Zatarain's Blackened seasoning.

I cleaned an 18 lb pike the other day. Im hoping it tastes as good as muskie.

Pike is the poor mans muskie....

I like tones cajun you can buy in bulk container at Sams. Its pretty much all spices, so you dont waste a bunch of money paying for what is essentially seasoned salt, like a lot of the others are. Just add some ground up water-softener salt if you feel its necessary!

I was once fed some pike prepared like blackend redfish. The spice was bought at a Space Aliens restaurant. It was wonderful.

I agree with lycan... I prefer lower salt versions and Tone's is surprisingly good.

I tried Saltier Than Obama and was disappointed.
