ever heard of it? tried it? made it? thinking of experimenting with a batch of northerns. kinda sounds gross, but kinda sounds cool too, idk. any other off the wall foods you tried?

Had some fish sausage in Michigan once, I believe it was whitefish,. Not a big fan of it way to fishy.

Good luck thou, maybe adding some pork or beef to the mix will help you out.

One of the worst dietary choices I have ever had sprung on me.

lol, hmm, okay so maybe a little shore lunch and peanut oil is just something you dont change. sounds like maybe fish sausage sucks. lol, maybe y it never has caught on here. i see its in japan, but hell, they eat half their stuff raw anyway lol, thanks for the input fellers

Crab cake sounds good. Cracker spread sounds good. Smoked sounds good. Poor mans lobster sounds good. Sausage not so much.

I've made walleye cakes several times. They are good, northern would probably be better because its more firm. I think i got the recipes here or the old site actually.

buddy's dad makes northern patties. just runs em through the grinder bones and all and patties them up. they are ok. personally, i would remove the Y bones. but, he doesn't.

Yeah I would have to remove the bones or at least the Y bone too if it was going in the grinder.

Yes, I have had pike cakes in the past. They aren't bad, and if you know what you're doing I would think they could be quite good.

ba ha ha ha! I got BURNED by that exact same thing. Looked so good!

It was the smell of cornbread coating in oil. Like a hound dog, I used my nose and tracked that sucker down from 200 yards away at a busy outdoor event. Only to have the life sucked out of my sails with that first and only bite. God awful...

Yeah, I can top that. Not being able to read Japanese very well, I stopped at an Italian restaurant up by Osaka one time. I basically pointed to the entrée section of the menu thinking I would eat anything.

I got hosed again as they delivered a plate of squid ink spaghetti. That stuff literally stained my lips for a couple of days and even as hungry as I was, I could barely choke down half a plate of it with a few beverages to wash the ink away.

Man, I've had some bad food experiences. ;:;banghead

Yes, and they are excellent! This was the Valentines day feast I prepared, was a hit with the Mrs! Walleye cakes over some mixed greens for an app and Venison Diane with some prosciutto/cream cheese wrapped asparagus. YUM

Here is the recipe for the fish cakes. Have made many times, always has turned out great. Actually prefer pike. Meat holds up better. May need to adjust ingredients slightly to achieve a good patty and season to taste. Also helps to roll slightly in flour before frying in 350 deg oil.

Fish cakes

5 shallots, minced
Olive oil
6-7 oz mayo
1 egg, beaten
2-3 oz of good brown mustard
1.5 tbsp chopped parsley
1 bunch of chives, minced
Tabasco sauce, as needed
Old bay seasoning, as needed
1 pd white fleshed fish- walleye and pike work really well
2 oz cracker crumbs- finely crushed - about 1 whole sleeve give or take
Salt and pepper, as needed
Peanut oil, as needed

1) cook fish fillets in boiling chicken stock, remove from liquid and flake apart. Remove any bones if present. Cool down in fridge.

2) sauté shallots in police oil until translucent

3) combine shallots, mayo, eggs, mustard, parsley chives, Tabasco, and old bay. Add mayo, flaked fish, and cracker crumbs

4) divide into small patties about 3 inches across, and 1/2-3/4 inch thick

5) saute fish cakes in peanut oil until golden brown and thoroughly cooked

6) garnish with red pepper marmalade (mixture of 4oz cooked red onion, minced, 1/2 oz olive oil, 2 whole roasted red peppers. 1 oz capers, minced chives, and salt and pepper, combine and allow to cool for several hours) or homemade tarter sauce.

I think the key to making every fish, or fish recipe taste good is how theyre cleaned. 1. Dont clean frozen or dead fish 2. Trim every single bit of dark meat BEFORE freezing. Those two simple rules ensure virtualy any fish tastes good.

Best fish I ever had eaten was 45 minute window from fillet table to the dinner table. I also do believe that slitting under the gills to bleed them out is that cats ass way of doing it now.
