I like them whipped with a dash of baking powder and small slug of whipping cream then folded over breakfast meat veggies ,cheese ,onion and ground peppercorn.

if i have bacon grease, i do prefer basted... without i generally cover and turn up the heat, then splash in bout 1 tbsp water to steam the top done... last nights trauma was a result of over aggressive shell cracking on my part - don't know my own strength at times i guess...

solid yolks are edible, but don't meet my culinary expectations... i'll regroup and try softer next time...

basted... every time. preferred method for the last 40 years. Basted prior to that by mommy.

Barely runny with a pudding like base on the yolk.

With truffle salt and black pepper.

Franks hot sauce dribbles across the top when served.

I then dip fruit jammed toast - or even fork pieces of egg onto each bite of toast.

Did I mention truffle salt? When I’m not home I almost can’t eat eggs cuz they suck without it.

soft barely done buttery scrambled eggs

saute morels in butter, then add eggs, cook low/slow creating creamy scrambled eggs

serve with plain buttered toast

morel heaven

My favorite is probably poached eggs but is kind of a hassle to make. Might have to cook up some corned beef hash and poached eggs real soon!
