I wouldn't change anything on the poppers, on the shrimp, I had them in the smoker for 50 minuets and would only do them for 30 minuets next time (just a little to much smoke flavor), I will also cut the cayenne pepper in half (a little to spicy for me).

Thanks, I bet the cold beer went down good with jalapeño poppers and the cajun shrimp. What type of wood did you use with the shrimp I know fish/seafood takes on smoke really well, I think that is why alder wood is recommended with seafood produces a milder smoke.

The 3 choices I had in my garage were hickory, apple and maple. I went with the maple, maybe apple would of been a little milder. :;:huh

I gave the shrimp a try last night. Great flavor. I cut the paprika, cayenne and pepper by about a third. Still a lot of heat. Used apple which was very mild. A little tweaking and it will impressive. May try it on some chicken breasts next time.

You've got room up in the ceiling to have a set of panel's that fold down from the ceiling to create total top/bottom walls.

You know - for days when the wind is at super suck intensity. (90% of the days in the summer)

Also - that shelter is begging for rope lights.

Hubs suggested rope lights but i didn't want to deal with the sheer amount of spiders that would take over😂 But we had 30+mph winds last night and it went great. I didn't want it too enclosed to allow the smoke to flow out.
