I pull it about a minute after I see 150 on the probe. Let it rest for 5-6 minutes, moist every time. 165 will instantly kill salmonella, 150 will do the same if held there for 3 minutes.225 on pellet grill until 160. Easy peezy and NOT dry! Don’t go to 165!!!!
