225 on pellet grill until 160. Easy peezy and NOT dry! Don’t go to 165!!!!

I pull it about a minute after I see 150 on the probe. Let it rest for 5-6 minutes, moist every time. 165 will instantly kill salmonella, 150 will do the same if held there for 3 minutes.

Point is - it doesn't need to rise 10 degrees. It needs to hold 150 for 3 minutes to be just as effective.
