My opinion is that prime rib is super easy. Set it out for 3-4 hours before. Rub thick with a salty concoction just before roasting. Cook uncovered until 125 and tent with foil for 10 min. If anyone wants theirs a little more done throw it in hot pan of au jus for 10 seconds on each side.

So, my prime rib question is, we bought one that is already seasoned and precooked to rare, what are your thoughts on the best way to heat this baby up?............................... Just a heads up for you people buying these in the store. Our local store is advertising these same roasts on sale for $10.99 a pound. My wife works at a place where she can purchase food from the food vender they buy from, and she bought the same roast for $5.50 a pound. Looked at one yesterday in the store up on north hill with a price tag of $198.00 ::wowzers::

Seasoning 2-3 days early will make it even better.

Reverse sear takes a little longer but there won't be any "brown" overcooked parts around the edges. It'll be your preferred "doneness" from edge to edge.

Started cooking brisket on my Traeger. First time was last summer. So easy and melt in your mouth meat. That's what I'm cooking for Christmas Eve, In fact it's cooking right now.

Update us on the sous-vide cooking method. I saw those things all over when shopping for the wife, but never bit. Curious, though.

you would never regret buying one I don’t think

compact, inexpensive, works in any tub, pan, small cooler

I even used it to preheat a big cooler of water for plucking turkeys

I don’t use it a lot - I’m real happy with just grilling a lot of meats

but for thick cuts it’s foolproof way to get it all to perfect doneness and tenderness

sear at the end

I started doing sous vide 15 yrs ago with old lab equipment before the modern/easy systems were available

We've made chuck roasts per this method that have turned out just as good as prime rib! Let us know how it turns out.

I chose sous vide today because I'm working until mid-day. No need for thermometers or assorted monitoring of time/temps, etc. It also frees up oven for other things.

About 20 minutes prior to meal time just take it out, brush with oil, maybe season some more, then brown/sear quickly in a Hot as Hades oven, rest/serve.

I forgot to mention that's another up side to sous vide. Frees up space and timing is totally flexible... it's been "done" for hours and will stay perfect temp until you're ready.

Give or take it's going to be as good as any you get from any grocery store and most meat markets.

the meat I have got from sams club has been as good as any I have gotten I would expect Walmart to be the same

Nothing wrong with Walmart meats, at least it's fresh for all the meat they go through in a day, it's all about the way you cook it
